Since its inception, quality has always been a priority for the Audry House. Their cognacs are a blend of eaux-de-vies gleaned exclusively from Petite and Grande Champagne regions. The specific soil where these grapes are grown offers great potential for a long aging process, allowing rich and complex notes to develop. The longer the aging process, the more voluptuous the finish, inviting a complexity based on powerful flavours that are balanced out with lighter notes. The progression of the tasting allows one to fully appreciate the beautifully smooth body of this exquisite tipple.

When Aristide Boisson passed away in 1950, he left precious casks of eaux-de-vies forgotten in the family cellar. There, they remained patiently until 1984, when Bernard Boisson, his son, discovered these precious casks. With 40 years to develop under perfect conditions, this priceless collection of eaux-de-vie has matured into an exceptional and rare treasure.

A masterful cognac is the result of meticulous teamwork between man and nature. Despite the specificities of its composition, the varietal options of the blends are endless. Creating a cognac requires the careful curation of the terroir, the precise selection of the variety of grape and a refined distillation process. Once the spirit is ready to be aged, the specific type of cask, the duration of the aging process and the perfect conditions of the cellar, all play a significant role in the perfection of the spirit.

In pursuing his vision, the master blender selects the eaux-de-vie with great attention to the combination of flavours, which define the character of the final product. Awareness of the different aromas – floral, fruity, fresh, light, powerful, spicy, woody, are essential for a perfect blend. During different seasons in the year, the grapes harvested offer a diverse variety of aromas that, under the hand of the master blender, offer up endless possibilities.

THE IMPORTANCE OF THE TERROIR
The Grande Champagne and Petite Champagne vineyards are nestled in the heart of the cognac region. The soil, a result of millions of years of ossification, is a mix of a high limestone levels and clay, which ensures ideal drainage of the land. The rich nutrients and proximity of large underground water reservoirs provide ideal conditions for the vines to grow in.
